Serves – 3-4

Alu and palak  both are so popular that it needs no introduction at all.  I have already put up a host of palak dishes like the Dal-palak, palak-moongdal masala, palak soup, Palak lachcha paratha and also Plak-paneer to name a few.  Today i would like to put up Alu-palak which is also as popular as palak-paneer  which is a good combo for roti and chapati.  Here it goes….

What you need to have:

1. Chopped Palak – 2 cups and green chili -2 (to be blanched together)

2. Cooked & cubed potatoes – 2 cups

3. Chopped Tomatoes – 1 cup

4. Chopped onions – 3/4 cup

5. Ginger garlic paste – 1 teaspoon

6. Cumin seeds – 1/4 teaspoon

7. Cloves – 2

8. Cinnamon – 1″ piece

9. Turmeric powder – 1/2 teaspoon

10. Coriander powder – 2 teaspoons

11. Garam masala powder – 1/4 teaspoon(home made)

12. Kasuri methi – 1/2 teaspoon

13. Sugar – 1 teaspoon

14. Milk cream – 1 tablespoon (optional)

15. Water – 1 cup (as needed)

16. Cooking oil – 2 tablespoons

17. 1. Wash and peal  also chop potatoes and cook it in cooker without adding water to the veggie till soft.  Remove it and keep it aside on cooling as shown in image-2.

2. Wash and chop palak and cook it in a wide bowl with green chili , sugar and a little salt till done.  On cooling pulse it in the mixer to a medium soft consistency without adding extra water to make puree.

7. 8. 9. While being boiled add garam masala powder and crushed kasuri methi to it and bring it to boil on low flame as usual.  Finally add milk cream (optional), stir and transfer it to serving bowl checking for salt.KONICA MINOLTA DIGITAL CAMERA                                                                                                                                 A closer view of the dish

Good to remember:

1. One can even use spinach in place of palak.

2. Garam masala is home made and hence only 1/4 teaspoon since it is very strong.

3. This dish can be relished the next day for better flavour.

Baingan bhartha

Baingan is nothing but egg plant and also Brinjal  in english needs no introduction at all.  My family loves Brinjal and especially the smoked Baingan bharith as it is out of the world with its pleasant aroma though it is a little laborious and messy to clean up the place and the veggie too!!!  I have already put up Yengai-stuffed egg plant /Brinjal in north karnataka style and is a very popular recipe on this blog.  Here is my version of this recipe….

What you need to have:

1. Chopped Tomatoes – 3/4 Cup

2. Chopped onions – 1 and 1/2 Cup

3. Roasted Cumin powder – 3/4 Teaspoon

4. Coriander powder – 1 and 1/2 Teaspoons

5. Garam masala powder – 1/2 Teaspoon(home made)

6. Ginger-garlic paste – 1 Teaspoon

7. Red chili powder – 1 and 1/2 Teaspoon

8. Turmeric powder – 1/4 Teaspoon

9. Sugar – 1/4 Teaspoon(optional)

10. Salt – As needed

11. Cooking oil – 2 Teaspoons

What you do with what you have:

1. Wash and chop tomatoes.  Also wash, peal and chop onions too and chop cilantro too.  Prepare the ginger garlic paste too and keep it aside.

2. 4. Place a skillet with 2-3 teaspoons of cooking oil in it on medium flame.  When heated, add cumin seeds to it and let it splutter.DSCN0087                                            Cumin seeds being added to coking oil to be spluttered

7. Good to remember: 1. Use tender and fresh  Egg plant for a better flavour.

2. Adding sugar gives a wonderful taste.

3. Roast it either on gas or on a thick skillet as well.  One can even roast on fire wood too if available.

 

 

Sprouted Matki in creamy gravy

Matki in marati is Moth Bean in english is another legume which tastes great when sprouted and has a unique flavour.  Moth bean masala(Matki masala)  is another popular dish which is a good combo for Jwari roti, chapati etc and i have already put up on this blog a couple of years back and also “Matki masala” a street food too a couple of months back which is well accepted by viewers.  I would like to put up Sprouted Matki in a creamy gravy which i prepared a couple of times at home and tasted great too!!Here is my version of the recipe….

What you need to have:

1. Sprouted Matki – 2-3 cups

2. Chopped onions – 2 cups

3. Chopped tomatoes – 1 cup

4. Ginger-garlic paste – 1/2 teaspoon each

5. Garam masala powder – 1/2 teaspoon (home made)

6. Red chili powder – 1 and 1/2 teaspoon

7. Dhania-jeera powder – 1 and 1/2 teaspoon

8. Turmeric powder – 1/2 teaspoon

9. Cashews -5-6(to grind to paste)

10. Cumin seeds – 1 teaspoon(to garnish on frying)

11. Cilantro – 2 teaspoon (to garnish)

12. Cooking oil – 2 tablespoon

What you do with what you have:

1. Wash and chop tomatoes, peal onions and chop it fine and keep it aside.

2. Cook sprouted Moth bean in the cooker adding required quantity of water till soft.  On cooling transfer it to plate/bowl.

4. Place a skillet with 2 tablespoons of cooking oil in it on medium flame.  On heating add chopped onions to it and fry till transparent adding salt. KONICA MINOLTA DIGITAL CAMERA

7. Grind soaked cashews in the mixer to a fine consistency and add this mix to the masala mix in the skillet and bring it to boil till a pleasant aroma of the masala mix oozes out.KONICA MINOLTA DIGITAL CAMERA                                           Grind cashew being added to the masala mix in the skillet 

8.Now add cooked Matki from step-2 to it and add a little water to make a suitable gravy required and bring it to boil on low flame checking for salt. 9. Mushroom stir fry

Mushroom dishes are so popular these days for the reason being that it is good from the health point of view and also the favorite of the younger generation.  In my young days i had neither  heard of these dishes in the restaurants nor at homes, other than those naturally available button mushrooms during the rainy season for a couple of weeks.  Now mushrooms are available through out the year and a variety of dishes in most of the restaurants too.  I have already put up  Mushroom Almond rice, mushroom masala, Alambe ambat,Mushroom-peas masala (Restaurant style) and a few more and today i would like to put up this simple dish yet a very yummy one too!!!  This dish is good combo for chapati and roti.

What you need to have:

1. Chopped fresh mushroom – 2 cups

2. Chopped spring onion greens – 1 cup

3. Chopped spring onion whites – 1/2 Cup

4. Garlic pod – 1

5. Cumin seeds – 1/2 Teaspoon

6. Green chilly – 1

7. Peanut powder – 1 Tablespoon(roasted)

8. Pepper powder – 1/4 Teaspoon

9. Turmeric powder – 1/2 Teaspoon

10. Salt – As per taste

What you do with what you have:

1. Wash and chop spring onions separately cutting the greens and the whites as shown in the image-2.

2. Wash and chop Mushrooms too as shown in the image-1 and keep it aside.

3. Place a skillet with 1 tablespoon of cooking oil in it on medium flame.  When heated add cumin seeds to it and allow it to splutter and while being done add slit green chili to it.KONICA MINOLTA DIGITAL CAMERA

Sweet corn curry

Sweet corn is much loved at home in almost all forms.  I like the specially roasted corn on the charcoal sprinkled with chili powder, salt and then brushed with lemon juice is excellent  in its flavor.  I normally pick it up when ever i find it on the cart on the road side at Mani-pal.  I have already put up a few dishes like the kosambari, corn vada, pulav etc..,  Today i would like to put up sweet corn curry with gravy which is a good combo with rice as well as chapati or even roti.  Here is my version of the recipe….

What you need to have:

1. Sweet corn kernels – 1 and 1/2 Cup

2. Chopped Capsicum – 1 Cup

3. Chopped Onion – 1 Cup

4. Chopped tomatoes – 1 cup(to be pureed)

5. Green chili  split – 2

6. Ginger garlic paste – 1 Teaspoon

7. Kasuri methi  – 1 Tablespoon lightly crushed

8. Turmeric powder – 1 Teaspoon

9. Red chili powder – 1 Teaspoon

10. Dhania jeera powder – 1 and 1/2 Teaspoon

11. Garam masala powder – 1/4 Teaspoon (home made)

12. Fresh cream –  1 Tablespoon

13. Cashew-nuts – 5-6 (soaked in a little milk)

14. Chopped Cilantro – A handful

15. Salt – As needed

16. What you do with what you have:

1. Wash, peal and chop onions fine, Also wash and chop Tomatoes , cilantro fine and keep it aside.  Soak cashews in milk and grind it to a fine paste.  Slit Green chili and chop cilantro as well and keep it aside.

2. Place a broad skillet with 2 Tablespoons of cooking oil in it on medium flame.  When heated add chopped onions to it and also little salt so that it is not burnt.  Fry till it is transparent.KONICA MINOLTA DIGITAL CAMERA                                                                    Chopped onion being fried

3. When done, add slit green chili, ginger-garlic paste and chopped capsicum and saute for about 5 minutes.

4. When done, add Kasuri methi, red chili powder, turmeric powder and Dhania jeera powder in a row and stir for a while.KONICA MINOLTA DIGITAL CAMERA

6. Add corn kernels and cook for a while covering it with a lid.  Add a little water as well so that it helps out to cook well.KONICA MINOLTA DIGITAL CAMERA

8. Finally add grind Cashew-milk mix  from step-1 to it and bring it to boil on simmering the flame.  Finally add milk cream and bring it to boil on sim flame only.  Check for salt and  Garnish with cilantro.  YummmmKONICA MINOLTA DIGITAL CAMERA

Good to remember: 

1. Use tender  and fresh corn kernels for the dish

2. Use fresh milk cream for an awesome aroma.

3. Using soaked and pealed Almonds in place of cashews is also another option.

4. Check for salt before serving.

Horse-gram kurma

Serves 4-5

Horse-gram /kulith/hurlikalu in english, konkani and kannada respectively.  We use this lentil in a lot of recipes and  have already put up a couple of them like the Horse-gram dosa, rumdan(idli) , Kulitha saru(soup) etc  Today i would like to put up Horse-gram kurma which is a little different but is a good combo with rice as well as roti!!Here is my version of the dish.  One can even sprout the lentil to make this dish and can even use other lentils like the Green gram, Black eyed peas etc.

What you need to have:

1. Soaked Horsegram – 1 cupKONICA MINOLTA DIGITAL CAMERA

                                                                    Soaked & drained Horse gram

Ingredients of wet masala to be sauted and grind:

1. Fresh grated coconut – 3 Tablespoons

2. Ginger paste – 1 Teaspoon

3. Chopped onion – 1/4 Cup

4. Red chili powder – 1 Teaspoon

5. Fennel seeds – 1 Teaspoon

6. Poppy seeds – 1 Tablespoon

7. Fenugreek seeds – 1/4 Teaspoon

8. Coriander seeds – 1 & 1/2 Tablespoons

9. Cumin seeds – 2 Teaspoons

10. Cloves – 2-3

11. Cinnamon – 1″ piece

12. Cashews – 3-4

12. Tamarind pulp- 1/4 Teaspoon

                                                               Ingredients of wet masala

What you do with what you have:

1. Cook soaked Horse gram in the cooker as usual for about 20 minutes on sim flame adding required quantity of water till soft.(do not over cook)

2. Grate coconut, peal and chop onion,and keep it aside.  In a skillet add coriander seeds and dry roast till done.  Like wise dry roast all the other masala ingredients one after the other till done.  In the same skillet add  2 teaspoons of cooking oil  and place it on medium flame and add chopped onions to it and fry till transparent.  When done add all other roasted masala ingredients and also coconut and just fry it .  Add chili powder or red chili and just stir it.  Add 1/2 teaspoon of tamarind paste.KONICA MINOLTA DIGITAL CAMERA

1. Always buy fresh and clean Horse-gram  from a reputed shop.(old stock will not cook soft)

2. One can replace horse-gram with any lentils like the green gram, black eyed peas etc

3. One can even sprout the lentils.

 

 

Baby corn capsicum stir fry

Time taken – 45 minutes in all

Baby corn and capsicum are two very popular veggies and when combined with litttle potato chopping  will be really yummy.  I am planning to put up this simple stir fry which is a jat pat side dish for roti as well as rice.  Here is my version of the recipe.

What you need to have:

1. Chopped capsicum – 1 cup

2. Chopped Babycorn – 2 cups

3. Chopped potatoes – 1/3 cup

Ingredients of Seasoning:

1. Chopped onions – 1/2  cup

2. Chopped tomato – 1/6 cup

3. cumin seeeds – A little

4. Dhania jeera powder – 1 Teaspoon

5. Turmeric powder – 1/2 Teaspoon

6. Red chili powder – 1 Teaspoon

7. Cooking oil – 2 Teaspoons

8. Salt – As needed

What you do with what you have:

1. Wash and chop capsicum , also peal and chop Baby corn lengthwise, wash , peal and chop potato as well lengthwise and keep it aside as shown in the image.  Wash, peal and chop onions and tomato too.

2. Place a wide skillet with 2 teaspoons of cooking oil in it on medium flame.  When heated add cumin seeds to it.  When fried add chopped onions and salt to it fry till transparent.KONICA MINOLTA DIGITAL CAMERA

3. When onions turn transparent, add chopped tomatoes and fry till a little mushy.  When done add chopped potatoes to it cook till soft.  When done add all powders in a row and give a strong stir.KONICA MINOLTA DIGITAL CAMERA

5. When cooked would be as shown in the image below.  Yummmmmmmmm!!!Enjoy with roti, chapati or even rice.  Check for salt and transfer it to a serving bowl.

Note:1. Use fresh veggies for better results.  Use tender baby corn for extra flavour.

2. I have used home made byadgi chili powder, hence one can use chili powder as per your spicyness either increase or decrease s per quantity of veggies used.

3. Do not add water at all since veggies will be cooked with its own water content.
