Spicy Black bean patties

Black bean is a small tiny shiny variety of common beans especially popular in Latin American cuisine.  They are often called simply Black beans.  This Black beans has a dense meaty texture which makes it popular in vegetarian dishes such as the Mexican-American black bean Burrito.It is a very popular bean in various regions of Brazil and is used in the national dish, Feijoada.  The Black bean is also a popular soup ingredient.  In Cuba Black bean soup is a traditional dish served with white rice.

I bought it from U.S and i tried out this spicy patties in combination with Sweet potato which was liked by all at home and i also prepared a gravy dish which i  will put it up in a couple of weeks later.Here it goes….

What you need to have:

1. Black bean – 1/2 cup

Ingredients of Seasoning:

1. Chopped onions – 1 and 1/2 cup

2. Garlic pods – 6-8(crushed)

3. Red chili powder – 1 and 1/2 Teaspoons

4. Turmeric powder – 1/2 Teaspoon

5. Dhania-jeera powder – 1 Teaspoon

6. Garam-masala powder – 1 Teaspoon

7. Bread crumbs – 1/2 Cup

8. Grated cheese- 1/2 Cup

9. Chopped cilantro – Ahandful (garnishing)

10. Powdered oats – 1/2 cup

11. Lemon juice – 1/2 Teaspoon

12. Olive oil – 2 Teaspoons(for seasoning)

13. Salt – As per taste

What you do with what you have:

1. Wash, peal and grate Sweet potato and keep it aside as shown in image-2.

2. Cook it in the cooker without adding water till done as shown in image-3.  Wash and cook Black bean as well in the cooker adding required quantity of water till soft and is shown in the same image along with sweet potato.

3. Place a wide skillet with 2 teaspoons of cooling oil in it on medium flame.  When heated, add chopped onions and a little salt and fry till transparent.KONICA MINOLTA DIGITAL CAMERA                                                                     Onion being fried till transparent

6. Just crush it well so that the veggie and the bean is mixed well to form a mixture.  Now add bread crumbs and remaining beans and mix well.KONICA MINOLTA DIGITAL CAMERA                                                      Remaining beans and bread crumbs being added

Good to remember:  1. Sweet potato should be cooked with out adding water for better taste.

2. Black bean is very hard and should be cooked till soft.  Else it is hard to crush it to get to the required consistency to make a homogeneous mix to make patties.

3. One can even deep fry it .

Oats-Moong dal tikki

Oats is so popular these days as it is good from the health point of view. This is a perfect evening snack as it is rich in fiber due to oats and rich in protein because of Moong dal.   I have already put up a few of the recipes like the oats upma, oats-poha upma, oats idli, to name a few and i tried out this tikki in combination with Moong dal, carrots etc.  Here is my version of the recipe:

What you need to have:

1. Moong dal – 1/3 Cup

2. Oats – 1 Cup

3. Grated green chili & ginger – 1/2 Teaspoon+ 1/2 Teaspoon

4. Grated Carrots – 1/2 Cup

5. Yoguhrt – 2 Tablespoon or Lemon juice

6. Garam masala powder – 1/2 Teaspoon

7. Red chili powder – 1/2 Teaspoon

8. Turmeric powder – 1/2 Teaspoon

9. Chopped cilantro – 1 Tablespoon

10. Chopped Mint leaves – a Few(optional)

                                                                                Quaker oats

What you do with what you have:

1. Wash, peal and chop onions fine, grate carrots, chop green chili, ginger, cilantro, mint fine and keep it aside as shown in image-2.

2. Soak Moong dal in water for about 30 minutes and cook it in the cooker adding very little water till done.  On cooling grind it in the mixer to a fine consistency.

5.Transfer all the ingredients including grind moong dal from step-2  to a wide bowl.   Set aside a couple of spoons of powder for dusting the tikki.KONICA MINOLTA DIGITAL CAMERA

8. Place a dosa skillet on medium flame with 1 or 2 Teaspoons of cooking oil splashed on it.  When heated place the tikki on it fry them till done closing it with a lid.KONICA MINOLTA DIGITAL CAMERA

1. Use minimum water to cook moong dal.

2. Do not add water while grinding dal.

3. One can use any vegetable of your choice.

4. Using mint is optional.

5. One can even deep fry the tikki if necessary.

Ragi-peanut laddoos

Ragi is very popular in southern part of our country .  Along with oats this is also one of the most nutritious and easily digestible  food.  It is now available and consumed by many people due to the fact that it is rich in calcium and protein and a good amount of iron too.  It is low in fat and that too  most of it is unsaturated fats.  As any other grains it has its shade of good and not so good aspects. Ragi is often grind to a fine powder and sold as Ragi flour.  I have  used Ragi flour, oats and peanuts  and also other ingredients for the laddoo here.   I have halved the ingredients here.   Here is my version of the dish.

What you need to have:

1. Ragi flour – 1 cup

2. Peanuts – 1 cup

3. Oats – 1/2 cup

4. Sesame seeds – 2 Tablespoons

5. Chopped jaggery – 1 and 1/2 cups

6. Pure ghee – Little less than 1/2 cup

What you do with what you have:

1. Place a wide skillet with 1 tablespoon of pure ghee in it on medium flame.  On melting, add ragi flour and roast till you get a pleasant aroma. KONICA MINOLTA DIGITAL CAMERA                                                        Ragi flour being roasted in pure ghee

4. On cooling peal and powder peanuts to a coarse consistency along with pealed cardamom.  Also dry roast sesame seeds in a spatula till it splutters.  Coarsely powder oats too in the mixer. Pound roasted ragi flour and grated jaggery in the mixer so that it gets mixed ideally to make the laddoos.  Transfer all the ingredients to a wide bowl and the laddoo mix is ready now. KONICA MINOLTA DIGITAL CAMERA

2. Use fresh ghee for making the dish.

3. Roast  all the ingredients ideally so that over doing may spoil the dish.

 

Oats and Ragi roti(with sprouted green gram(moong)

Makes 4-5 of the above size

Oats is the most common ingredient in many of the dishes these days in either breakfast , lunch and also in the tiffin for those who are health conscious.  I have already put up a few dishes like the oats upma, oats laddoo, oats-poha upma, oats  veg roti etc and now comes the oats ragi roti with sprouted Green gram!!!Here it is;

What you need to have:

1.Ragi powder – 3/4 cup

2. Oats – 1/2 cup

3. Sujee – 1/4 cup

4.Chopped onions – 1 cup

5. Chopped green chili – 1/2 teaspoon

6. Grated ginger – 1/2 teaspoon

7. Grated coconut – A handful(optional)

8. Chopped cilantro – 1 Tablespoon

8. Chopped Mint leaves – 1 Teaspoon

9. Salt – as needed

10. Oil – as needed to roast the roti

What you do with what you have:

1. Wash and peal onions and chop it fine.  Wash and chop cilantro, mint fine  and keep it aside.

2. Soak green gram in water over night.  Drain water and keep it aside  tied up in a piece of cloth for about 6-7 hours.  Open it later and you will find it sprouted.  Grind it in the mixer to a coarse paste without adding water.KONICA MINOLTA DIGITAL CAMERA

2. Transfer grind green gram mix, oats, ragi powder,sujee, cumin seeds, chopped onions, cilantro, mint , chopped geren chili, ginger into a wide bowl and add required quantity of salt to it.  Add water to the dough and bring it to the required spreading consistency.  The dough would be as shown in the image below.KONICA MINOLTA DIGITAL CAMERA

4. Place a roti skillet on medium flame.  On heating splash a little oil and  place the roti with banana leaf facing upwards and once it is cooked, remove the leaf and roast it on the reverse till done  splashing a little oil .KONICA MINOLTA DIGITAL CAMERA

1. One can even peal of the skin of moon g beans if needed.  I have not for it is fibrous!!!

Oats-Dry fruits Laddoos

My personal fascination with oats continues – from my own conscious caution about healthy eating and also spurred by the encouragement of many readers of this blog. I continue experimenting with oats – some past successes have been uploaded as oats appam, oats poha upma, oats upma, oats-chana dal laddoos, oats chiwda, oats roti, oats paratha, peanut-oats laddoos. Today’s recipe is also hopefully mindful of healthy eating – oats with dry-fruits, peanuts, and just about a teaspoon of pure ghee. There is no sugar or jaggery in this recipe, and all sweetness is rendered only by dates (which are healthy). Please do try out and hope relish it too!!!!!!!!!!

What you need to have:

1. Oats – 1 cup

2. Peanuts – 1 and 1/4 cup

3. Seedless dates – 1 and 1/2 Cup

4. Poppy seeds – 2/3 Cup

5. Cardamom -4-5

6. Pure ghee – 1-2 Teaspoon

What you do with what you have:

1. Place a wide skillet with Quaker oats (or any other brand)  in it on low/medium flame and dry roast it till you get a nutty aroma.

2. Empty the skillet and dry roast peanuts until you’re able to peel the peanut skins off.

3. Powder roasted oats in the mixer to a fine consistency. Peel the roasted peanuts  from step-2 on cooling and powder it separately in the mixer along with peeled cardamom too. Dry roast poppy seeds as well in a skillet till you get a pleasant aroma. When cooled, powder it in the mixer to a fine consistency. Grate dates and mix all the ingredients in a bowl.  Also add grated almonds and pista.                                                                                                                                                                                  Poppy seeds being dry roasted

  4. Pinch out required quantity of the mix and make them into round laddoos.

How long it takes: 1 hour

Good to remember:

1. Roast oats with a teaspoon of pure ghee  on low flame till you get a nutty aroma but  do not burn it

2. This laddoo may not be very sweet as neither sugar nor jaggery is used. The sweetness is only of the dates.  So one can increase the quantity of dates to turn out a little sweeter. Pure ghee can be also added if needed.                                                                                                .

Oats Appam

Makes : 28 Appams

Surprisingly oats preparations have become the most popular demand from the readers, and even more surprisingly they are actually quite yummy ! I have put up a few dishes from oats like the oats roti, oats paratha, oats upma, oats-poha upma, oats-poha chivda, oats-chana dal laddoos and now comes the appam.  It is a sweet appam, and I plan to attempt a spicy version in the upcoming weeks.  Here is my version of Oats Appam.

What you need to have:

1. Oats – 3/4 Cup

2. Wheat atta – 2 Tablespoons

3. Bombay sujee – 3 Tablespoons

4. Cooking soda – A pinch

5. Chopped jaggery – As per taste

6. Fresh grated coconut – 2 Tablespoons

7. Chopped cavendish banana – 1/4 cup

8. Grated cashews – A handful

9. Sesame seeds (white) –  1/4 Teaspoon (optional)

10. Cardamom – 5-6 (powdered)

11. Salt – A pinch

12. Cooking oil or pure ghee – 4-5 Tablespoons butter

13. Water – 1 Cup in all (approx to make the dough)

What you do with what you have:

1. Place a skillet with oats in it and dry roast it on medium flame till you get a nutty aroma.  On cooling it powder to a medium fine consistency

2. Sieve the oats powder, wheat atta, cooking soda in the atta siever.  Transfer it to a broad bowl.

3. Grind chopped bananas, jaggery, fresh grated coconut in the mixer. Add water in steps to a medium fine consistency.

4. Add this mix to the bowl from step-3 and mix well adding grated cashews, sesame seeds, cardamom powder and remaining water to bring it to a smooth batter consistency.

5. Place an appam griddle on medium flame.  Add cooking oil or butter in each of the appam mould and when hot, pour appam batter in it. Adjust the flame as per the size of your burner and cook till done on a low/medium flame.

6. Flip and cook on the reverse adding a little ghee or oil.

How long it takes : 1 hour (Including making the dough and frying the same)

Number of servings : 28

Good to remember:

1. Dry roasting of oats should be done on low flame.

2. Quantity of water depends upon the brand of oats.

3. Always use cavendish ripe bananas else it will not have the aroma of bananas at all. Also consistency of the dough will be right.

4. Fry Appams always on low/medium flame adjusting as per the size of your burner.
