Ambe Hashale (Aamras / Mango Juice in Coconut Milk )

I have already put up Aamras and this is the old conventional Aamras with coconut milk and jaggery. We give this concoction a special name and place in Konkani cuisine, ‘Ambe hashale’. It tastes great with either puri, chapati or even served chill as a drink.  I have used the mangoes from our own garden and home-made fresh coconut milk. The recipe is very simple and easy yet very tasty. Here it is:

What you need to have:

1. Chopped sweet mango pieces – 1/2 cup

2. Mango pulp(sweet) – Around 2 cups

3. Coconut milk – 2 cups

4. Jaggery – As per taste

5. Fresh grated coconut –  2 cups (To extract coconut milk )

6. Thin Beaten rice – A handful

7. Cardamom – 5

What you do with what you have:

1. Preparing home-made coconut milk: Grate coconut and grind it in the mixer adding water in steps to a medium coarse consistency. Then, to extract coconut milk, strain the ground mix in a strainer.  Add some more water and grind again so that you get some more coconut milk on straining. Coconut milk is as shown in image-2 (above).

2. Wash, peel and chop mango into small pieces as many as required to add to Aamras as garnishing. Grind the remaining pieces it in the mixer with chopped jaggery into a smooth paste. Add this paste to the coconut milk from step-1 to it.

3. Add the mango pulp to coconut milk and stir well. Wash and squeeze water from beaten rice and add it to the same mix. Peel cardamom and powder it and add to it.  Aamras is ready to be served either chilled or at normal temperature. Add chopped mango pieces too.

4. Transfer to serving bowls and serve chilled. Like I always say – Yummmmmmmmmmmmm !!!

Good to remember:  

1. Use fresh, sweet and pulpy mangoes like the Ratnagiri Appus or even Pyry variety.

2. Tangy variety of mangoes will curdle coconut milk and may spoil the taste of the dish.

3. One can even use the coconut milk available in super bazar as well, but as far as possible home made coconut milk is always more welcome.

4. Adding beaten rice is optional.

Cashew Fruit Juice

Cashew need no introduction although they are more common as cashew nuts rather than the fruit itself. Though it is available in plenty here in general, this year was an exception with a rather poor crop. The juice though tastes great, is simple enough to prepare and whats more even gives you a sound sleep !

What you need to have:

1. Cashew fruit  -2

2. Salt – To taste

3. White pepper powder – A pinch (for 1 cup)

4. Sugar – A pinch

5. Black salt powder – A pinch (Check taste and then add)

What you do with what you have:

1. Wash and cut cashew fruit into bite size pieces and put it into the mixer bowl. Run the mixer/blender adding water in steps to a fine consistency.

2. Strain the juice and pour it into a glass and add required quantity of salt to taste , a pinch of white pepper powder, A pinch of sugar and also a pinch of Black salt powder to which gives extra flavour to the juice .  Serve chill.  Very yummy, though simple.

Watermelon Juice

Watermelon needs no introduction and is a universal favorite. It is so juicy but at the same time needs not filtering of residue ( unlike with pineapple/tomato juice etc. ). It quenches thirst like no other and while the summer is close to gone, enjoy this while it lasts.

What you need to have:

1. Chopped watermellon pieces – 2 and 1/2 cups

2. Sugar – 1-2 Teaspoons(Optional)

3. Lemon juice – 1/4 Teaspoon

4. Nutmeg powder – A pinch

What you do with what you have:

1. Wash, peal and chop only the upper reddish layer of the fruit and remove the seeds if any and keep aside.

2.  Run the mellon pieces in the mixer/blender adding little water if necessary.

3. While serving add sugar, a few ice cubes and a pinch of Nutmeg powder and lemon juice.  Wonderful juice for this summer!!!!.

A small variation is that instead of nutmeg and lemon juice you can add white pepper powder with the rest of the ingredients/process being the same.

Ragi Juice

I thought of putting up this wonderful juice which should be an excellent choice for this hot summer ( and its only getting hotter here in Manipal at least ) This juice is a very old recipe which I first tried in my childhood days in my granny’s. Now though this is available in Manipal juice centers. Just to note that if you are a Ragi fan, I just put up Ragi Manni a couple of weeks ago.

What you need to have:

1. Ragi – 1/2 cup

2. Milk – 1 cup (good life milk)

3. Jaggery – As per taste

4. Cardamom – 4-5

Ingredients of Ragi Juice

What you do with what you have:

1. Peal cardamom, grate jaggery fine and keep aside.

2. Wash ragi and grind it in the mixer adding sufficient quantity of water in steps along with half the quantity of cardamom to a fine consistency.

3. Strain it in a clean muslin cloth and add milk chopped jaggery and remaining cardamom powder chill it and enjoy it this hot summer.

Yellu Neeru ( White Sesame Juice )

Yellu in kannada is sesame in English. Sesame juice is very soothing in hot summer. It really tastes great when chilled and served. Here in Manipal it is available in some of the shops close to the college campuses. It is very easy to prepare and also very tasty. So yeah, give this a shot.

What you need to have:

1. White yellu(sesame )  – 1/4 cup

2. Jaggery – As per taste

3. Milk – 1 cup(I have used “good life” milk)

4. Cardamom – 4-5

What you do with what you have:

1.Wash and drain water from sesame. Place a skillet on medium flame with washed sesame in it. Just warm it up in such a way that it just swells when compared to the original sesame seeds in image 1, but never sputters at all (See below).  Chop jaggery, peal and powder cardamon and keep aside.

2. Transfer warmed up sesame seeds from step 1 to a mixer bowl and grind it to a fine consistency adding required quantity of water in steps.

3. Transfer ground sesame mix to a bowl and required quantity of milk to it. Also add chopped jaggery and powdered cardamom from step 1 to it. Check for sweetness and add some more jaggery if needed.  Ready to serve Yellu juice is as shown in the image below. Enjoy chilled !

Green Gram Juice

Yes ! You read that right. During the summers we prepare a variety of healthy home made juice rather than buy soda outside. It is not only natural but also harmless since we use no preservatives and instead refrigerate for a day or two at the most and finish it off ! This juice is in this category – tasting is believing.

What you need to have:

1. Green gram – 1 cup

2. Chopped jaggery – 1 cup ( approx )

3. Cardamom powder – 1 teaspoon

4. White pepper powder – A little

What you do with what you have:

1. Wash green gram and drain water completely. Place a skillet on low flame and dry roast green gram in it for about 15 minutes till you get a pleasant aroma and never get burnt.

2. Peal cardamom and add it to the roasted gram. Chop jaggery as well and keep it aside.

3. Grind roasted green gram from step 1 in the mixer adding water in steps to a fine consistency.

4. Add required quantity of water to bring it to the required consistency and add chopped jaggery from step 1 to it and stir well. Also add a pinch of pepper powder to it. Chill it and serve. Remaining juice can be preserved in the refregerator and can be consumed the next day as well.

Java Apple Fresh Fruit Juice(Gud gud jam juice)

The mercury has been shooting up for a while now here in Manipal and thats when a simple summer delight as a fresh fruit juice comes in handy. Jam is the seasonal fruit of the summer here.  It is available in two varieties – white and pink. Java Apple in english   is called “Gudgud Jam” in Konkani and “Jambu Nerale” in Kannada.(Check wiky)  It is a wonderful fruit which not only quenches the thurst but is also  filling. It is also very juicy and the taste somewhat resembles the sugarcane juice. The Pink variety is fluffy but not as juicy as this and a little tangy as well.  It is in my   neighbour’s garden.

What you need to have:

1. White Java Apple fruit – 10 – 12

2. Ginger – 1 ” piece

3. Lemon juice- A few drops

4. Sugar – a little(Optional)

What you do with what you have:

1. Wash, clean and chop java Apple  fine to clear any dirt etc.  Also wash and chop ginger and keep aside.

2. Run chopped fruit, chopped ginger and sugar in the mixer till your desired consistency. Strain it and serve chilled with a few drops of lemon. Really cool and soothing for this summer heat.
