Palak-Methi Na Muthia

Palak and Methi both are pretty popular greens available almost all the year through.  I have already put up a few dishes involving these as primary ingredients – Alu-methi masala, Thepla, Palak soup and Palak Rice   etc. This dish is a combination of both the greens in addition to  some atta, sujee and also the basic masala. It is a Gujrathi dish and really tastes yum with chutney or tomato sauce. Give this a chance when you have some time on a relaxed weekend evening.

What you need to have:

1.Palak leaves – 1 and 1/2 cup

2. Methi leaves chopped – 1 cup

Ingredients of Masala:

1. Wheat Atta – 5-6 Tablespoons

2. Besan/chick peas Atta –  3 and 1/2 Tablespoons

3. Semolina – 1 Tablespoon

4. Green chilli paste – 1 Teaspoon

5. Red chilli powder – 1 Teaspoon

6. Cumin seeds – 1/2 Teaspoon

7. Salt – To taste

8. Lemon juice – 1/2 of a lemon

9. Cooking oil – 2 Teaspoons

10. Sugar – 1 Teaspoon

11. Cooking soda – 2/3 Teaspoon (optional)

Seasoning ingredients:

1. Mustard seeds – 1 Teaspoon

2. Sesame seeds – 2 Teaspoons

3. Asafoetida powder – 1/3 Teaspoon

4. Turmeric powder – A pinch

What you do with what you have:

1. Wash and chop both the greens and keep it aside as shown in image 1.

2. Mix both the chopped greens and other masala ingredients in a broad bowl.

3. Mix all the ingredients adding water in steps to make it a soft dough mix so that one should be able to roll it .(The dough need not be hard since we again need to steam it like idli.)

4. Pinch out some dough and make it elongated ellipsoids like those below.

5. Place a broad based Idli bowl on medium heat adding sufficient water. When the water boils place the muthia rolls in it and steam it like idli till done. Make sure the lid is closed.

6. When steamed it would be as shown in the image below.  Cut it into halves and place it aside to season it like the Dhoklas.

Ingredients of Seasoning:

1. Mustard seeds – 1 Teaspoon

2. Asafoetida powder – 1/2 Teaspoon

3. Turmeric powder – 1 Teaspoon

4. Sesame seeds – 2 Teaspoons

7. Place a skillet with 3-4 Teaspoons of cooking oil in it on medium flame. When heated add mustard seeds and when they splutter, add sesame seeds and turmeric powder. When done, add steamed muthia pieces from step 6 to it and roll well so that the seasoning covers almost all the pieces.

8. Enjoy with either Pudina chutney or even the Tomato sauce. Yummmmmmm !

Number of servings: 4-5

Good to remember:

1. Use fresh and tender greens for the dish.

2. Adding Cooking soda is also an option.

3. One can steam Muthia in the cooker as well like you steam idli.
