Beetroot Upkari

Beetroot is so popular a veggie that we prepare more than a few dishes using it. It gives amazing colour to the dish even if added in small proportion. The first of the few beetroot dishes I put up on this blog is the “beetroot sassam” which was well received by the fellow bloggers who followed my blog in the early days. This gave me immense confidence to put up recipes on this blog. I have already put up beetroot salad, beetroot halwa, beetroot rice, and beetroot-chana masala which have also been appreciated by all. Today I am putting up this simple upkari which is an easy side dish for the beginners too.

What you need to have:

1. Chopped Beetroot – 2 cups

2. Mustard seeds – 1 Teaspoon

3. Blackgram dal – 1 Teaspoon

4. Turmeric powder – 1 Teaspoon

5. Cumin seeds – 1 Teaspoon

6. Asafoetida powder – 1 Teaspoon

7. Green chilly – 3-4

8. Curry leaves – 2-3 Strings

9. Fresh grated coconut – 2 Tablespoon

10. Salt – To taste

12. Cooking oil – 3-4 Teaspoons

What you do with what you have:

1. Wash, peel and chop beetroot fine so that it will cook faster. Wash and slit green chilly as well. Also grate coconut and keep it aside as shown in image-2.

2. Place a cooker with 4 Teaspoons of cooking oil in it on medium flame.  When hot, add mustard seeds, blackgram dal together. When mustard splutters, dal also is fried. Now add cumin seeds, asafoetida powder, green chilly, currry leaves and turmeric powder in a row.

3. When done add chopped Beetroot from step-1, salt, also grated coconut and very little water to it and stir well. Close the lid, place the weight, pressure cook for around 20 minutes on low flame only. When the pressure releases just serve hot with rice and dal. Simple and yummmmm!!!!!

4. Transfer it to a bowl. One can even enjoy with chapati as well

Good to remember:

1. One can cook peeled beetroot in the cooker, cutting it into 4-5 pieces and then on cooling chop it fine and seasoning. The taste will be different.

2. Tastewise this version of the uplkari will be really yummy, as oil used in the seasoning will enhance the taste of the dish.

3. One can season it with chopped onions which also tastes great.
