Chinese potato Upkari

Chinese Potato, unlike the other usual potato,  is not available throughout the year, but only for 2 months in a year. Though potato is considered to be highly starchy and fattening etc., it is the king of all veggies and a universal favorite. Though I call it the cousin of potato, the Chinese potato is not that popular, but it is very good from the health point of view. It is even served to the lactating mothers and even to the unwell. We prepare almost all the dishes like the gojju, upkari, soung, patties and also vada. Today I would like to put up the simple and conventional Upkari which we prepare. We call it “Koorka” and in Kannada it is “Samrani”. Here it is:

What you need to have:

1. Peeled and chopped Chinese potatoes – 2 cups

2. Green chilly – 2-3

3. Mustard seeds – 1 Teaspoon

4. Blackgram dal – 1 Teaspoon

5. Cumin seeds – 1/2 Teaspoon

6. Asafoetida powder – 1/2 Teaspoon

7. Curry leaves – 2-3 Strands

8. Fresh grated coconut – 2 Tablespoons (For garnishing)

9. Salt – As per taste

10. Cooking oil – 2-3 Teaspoons

Ingredients of Chinese potato upkari

What you do with what you have:

1. Wash and peel the Chinese potatoes lengthwise and keep it aside. Wash and slit green chilly as well.

2. Place a skillet with 3 Teaspoons of cooking oil on medium flame. When heated, toss mustard seeds into it. When it starts spluttering add Black gram dal to it. When fried, add cumin seeds, asafoetida powder and slit green chilly, curry leaves as well. Just stir for a while.

3. Add chopped Chinese potato from step-1 to it lowering the flame, sprinkle a little water and mix well with a spatula adding required quantity of salt and close it with a lid. After a while just remove the lid and if not cooked soft, splash a little more water and keep the lid closed. Add fresh grated coconut.

4. Ready to serve Chinese Potato Upkari is as shown in the image below. Enjoy with rice, dal and papad!!!!

Good to remember:

1. This veggie should be used fresh to make Upkari, else it will be difficult to peel. Always peel it and soak it in water else it will turn brown like the usual potato and actually much more than potato.

2. Do not add lot of water since it will spoil the taste of the dish. Always cook it on low flame by sprinkling water when ever required.
