I have already put up  a variety of one pot meals on this blog and today I would like to add one more to that list. This coconut rice is the delicacy of Tamilnadu and is very simple in preparation. It is not all that spicy and can be served to the kids as well. It will surely serve as a lunch box. Personally I also feel this is really a safe and wholesome dish as it has no strong masalas. Here it goes.

    Hi Aunty,
This is Rukmini, Harini’s cousin. I made this recipe for when we had a visitor and it came out great! The flavoring was really good.
I over-cooked the rice so that’s something I have to fix next time, but the flavor was just great.
Thanks – you have become my go-to site for Indian recipes 🙂
