Cabbage Bhuthi

Cabbage is a leafy vegetable available almost 6 months in a year. It tastes almost like the Cauliflower stem since I feel both of them belong to the sme family. We prepare a variety of dishes with cabbage – this dish is made in combination with potato and onion. This is a classic dish  among the Konkanis and goes very well with Dalithoy and rice.

I have seen cabbages available in two colours – green which is most popular and purple which I have seen in Bangalore and also in US supermarkets. I have not tried this dish with the purple variety though if you get a chance to, please leave your feedback here.

What you need to have:

1. Chopped cabbage – 3 cups

2. Chopped Potatoes – 1/2 cup

3. Chopped onions – 2/3 cup

4. Cashews – A few (optional)

Chopped Cabbage, Onion & Potatoes

Ingredients of Wet Masala:

1. Fresh grated coconut – 2/3 cup

2. Red chillies – 3

3. Corriander seeds – 2 tTeaspoons

4. Tamarindpulp – 1/2 Teaspoon

5. Turmeric powder – 1/2 Teaspoon

What you do with what you have:

1. Wash and chop cabbage and potatoes lengthwise and keep it aside as shown in the image above. Chop onions as well.

2. Place a skillet with 4 teaspoons of cooking oil in it on a medium flame. When heated add half the quantity of chopped onions to it and fry them till it turns transparent.

3. Grate coconut and keep it aside. Place a spatula with 1 teaspoon of cooking oil in it on the flame and fry red chillies till it is done for 10-15 seconds.

4. Grind grated coconut, red chillies and remaining wet masala items in the mixer to a medium fine consistency adding water in steps. That should give you something like the image below.

5. Add the ground masala to the fried onions from step 2 and cook it for about 5 minutes on a low flame and is as shown in the image below.

6. Now add the remaining onion, chopped vegetables, cashews and cook it till it is smooth adding a little water on a medium flame. Ready to serve Cabbage Bhuthi is as shown in the image below.

    Hi Pratibha – Just yesterday, in our New Years Party we had someone bring Batata Song with Bibbo (cashew) and it tasted just great… So while we also prepare Cabbage Bhuthi quite often at home, it seems that using your above idea of cashews will be a tasty variation for us.

    Hi Dinkar,

    Cabbage bhuthi itself is a sober dish and adding cashews will surely enhance the beauty of the same.
