Methi Palav

Basically, Pulav is nothing but masala mixed rice with all vegetables . We normally prepare Veg Pulav, peas pulav etc., and here is yet another type –  Methi (Fenugreek) pulav. I prepared it for this weekend as a lunch-dish. Methi of course is the main ingredient and coconut milk is added for additional flavour. It is easy to prepare and tastes yummy.

What you need to have:

1. Basumathi rice                              1 cup

2. Methi leaves                                 2 cups

3. Green peas                                   1/4 cup

4. French Beans                                1/4 cup

5. Carrot  diced                                1/4 cup

6. Coconut milk                               1 cup

Basumathi Rice

Chopped Green Vegetables

Ingredients of Seasoning:

1. Onions(Big)                                 2

2. Cashews                                    A handful

3. Kishmish                                   A handful

4. Turmeric powder                      1 Teaspoon

5. Garam masala powder              1 Teaspoon

Ingredients of Wet Masala:

1. Onion(size of a lemon)                             1

2. Garlic cloves                                             5-6

3. Ginger                                                       2″ piece

4. Coriander leaves                                      A handful

5. Mint leaves(Pudina leaves)                       A handful

6. Tomato                                                    1

7. Green chillies (medium spice)                  3

Ingredients of Wet Masala

What you do with what you have:

1.Wash and drain Basumathi rice and dry it on a piece of cloth .

2. Wash, chop all the vegetables and Methi leaves finely  and keep it aside. Also chop the onions lengthwise for seasoning. (See images above)

3. Grind all the wet Masala ingredients in the mixer to a fine consistency without adding water and is as shown in the image below.

4. Place a cooker with 2 Tablespoons cooking oil in it on the flame.  When heated add cashews, kishmish and when fried add chopped onioons and salt to it.  When the onion turns transparent add both turmeric powder, Garam masala powder to it and stir it further. This is the Palav masala.

5. Add washed, dried Basumathi rice to it and stir well.  Add the ground wet masala and the chopped vegetables as well and stir well.

6. Lastly add 1 cup coconut milk and the rest of the water required to cook the same.  Close the lid and cook as usual for 20 minutes.

Ready to serve Methi pulav is as shown in the images below. Serve hot with either salad or tomato and onion rings.

    I made Cilantro and Mint rice but never tried Methi. Will try it soon.. Thanks for sharing the great Idea !
